Cooking with Cream

Sweet

Stir or swirl into double or rich cream:

  • Vanilla bean seeds and a little icing sugar
    Chilled fruit purées such as mango, strawberry, raspberry and a matched liqueur
    Dried fruit macerated in liqueur
    Flavoured curd e.g. lemon and passionfruit curd

Savoury

Stir or swirl into double or rich cream:

  • Pesto or Salsa verde
    Puréed roasted garlic and fresh herb
    Roasted red peppers and freshly ground black pepper
    Roasted eggplant puree, finely chopped parsley and garlic

  • Dollop into soups or onto hot chicken or fish
    Stir through hot pasta
