Crunchy Cheddar Coleslaw

Ingredients

1/2 cup lemon juice

1/3 cup olive oil

1 tablespoon honey

1 tablespoon seeded mustard

2 large carrots, grated

1/2 red cabbage, shredded

1 red capsicum, thinly sliced

1/2 Spanish onion, thinly sliced

100g prepared crispy noodles, lightly crumbled

2 cups grated Australian cheddar cheese
Method

Combine lemon juice, oil, honey and mustard. In a separate bowl combine carrot, cabbage, capsicum, onion and noodles.

Pour over dressing and toss through grated cheddar cheese. Serve
