Crunchy Cheddar Coleslaw

Serves 4

Ingredients

  • 1/2 cup lemon juice
  • 1/3 cup olive oil
  • 1 tablespoon honey
  • 1 tablespoon seeded mustard
  • 2 large carrots, grated
  • 1/2 red cabbage, shredded
  • 1 red capsicum, thinly sliced
  • 1/2 Spanish onion, thinly sliced
  • 100g prepared crispy noodles, lightly crumbled
  • 2 cups grated Australian cheddar cheese

Method

  1. Combine lemon juice, oil, honey and mustard. In a separate bowl combine carrot, cabbage, capsicum, onion and noodles.
  2. Pour over dressing and toss through grated cheddar cheese. Serve
