French Toast with Plump Dried Fruit Compote

Serves 4

Ingredients

  • 150g dried fruit salad, chopped
  • 1/3 cup orange juice
  • 1/3 cup water
  • 4 small slices Italian style bread
  • 1/2 cup Australian skim milk
  • 1 egg
  • 1 cup Australian low fat ricotta cheese

Method

  1. Bring fruit, juice and water to a simmer in a saucepan, covered. Remove from heat and stand for 10 minutes or until fruit is plump.
  2. Heat a non-stick frying pan over medium heat. Dip bread into combined milk and egg, draining excess liquid off. Cook bread 2 minutes each side or until golden.
  3. To serve, pile French toast with ricotta and fruit, then drizzle with a little of the poaching liquid.

Tips / Handy Hints

Serve with a skinny latte to obtain a full serve of dairy for the day.
