French Toast with Plump Dried Fruit Compote

Ingredients

150g dried fruit salad, chopped

1/3 cup orange juice

1/3 cup water

4 small slices Italian style bread

1/2 cup Australian skim milk

1 egg

1 cup Australian low fat ricotta cheese
Method

Bring fruit, juice and water to a simmer in a saucepan, covered. Remove from heat and stand for 10 minutes or until fruit is plump.

Heat a non-stick frying pan over medium heat. Dip bread into combined milk and egg, draining excess liquid off. Cook bread 2 minutes each side or until golden.

To serve, pile French toast with ricotta and fruit, then drizzle with a little of the poaching liquid.

Serve with a skinny latte to obtain a full serve of dairy for the day.
