Solubility is among the most frequently reported quality attributes of dairy powders, but what do commonly used methods actually determine? Dissolution is not a single event: it involves wetting, sinking, dispersion, disintegration and molecular dissolution, each influenced by the powder, the liquid and the conditions of reconstitution. Different testing methods capture different parts of this process and may therefore produce very different answers to the apparently simple question: Is this powder soluble?. This webinar will return to the underlying physical principles of powder dissolution and critically examine what established solubility, dispersibility and sedimentation methods measure. It will explore how sample preparation and test conditions shape the result, what an insoluble fraction actually represents.
Presenter Biography
Prof. Thom Huppertz holds a MSc from Wageningen University and a PhD from University College Cork. His career includes academic and industrial research in the field of dairy science and technology. His research has spanned from products to processes, from biosynthesis of milk to digestion of milk constituents in the human body, and from product and process optimization to sustainable food systems. He currently combines the roles of Research Professor at University College Cork, Director at FrieslandCampina, Distinguished Visiting Professor at Victoria University, Visting Professor at Jiangnan University and Editor-in-Chief of International Dairy Journal.
